Finger lime cheesecake

Ingredients for the Crust:

  • 2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

Ingredients for the Filling:

  • 24 oz. cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1/4 cup all-purpose flour
  • 1/4 cup finger lime juice
  • 1 tbsp. finger lime zest

Instructions:

  1. Preheat the oven to 350F.
  2. In a large bowl, mix together crushed graham crackers, melted butter, and granulated sugar until well combined. Press the mixture into the bottom of a 9-inch springform pan.
  3. Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool completely.
  4. Reduce the oven temperature to 325F.
  5. In a mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
  6. Adding one at a time, beat in the eggs.
  7. Add in sour cream, heavy cream, flour, finger lime juice, and finger lime zest. Mix until well combined, smooth, and creamy.
  8. Pour the mixture onto the cooled crust.
  9. Place the cheesecake into the oven and bake it for 60-70 minutes, or until the edges have set and the center is slightly jiggly.
  10. Remove the cheesecake from the oven and let it cool to room temperature before refrigerating it for at least 3 hours or overnight.
  11. Serve the cheesecake with a sprinkle of crushed graham crackers and a few finger lime pearls for garnish.
