Finger lime cheesecake

Ingredients for the Crust:
- 2 cups crushed graham crackers
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
Ingredients for the Filling:
- 24 oz. cream cheese, softened
- 1 cup granulated sugar
- 4 large eggs
- 1/2 cup sour cream
- 1/2 cup heavy cream
- 1/4 cup all-purpose flour
- 1/4 cup finger lime juice
- 1 tbsp. finger lime zest
Instructions:
- Preheat the oven to 350F.
- In a large bowl, mix together crushed graham crackers, melted butter, and granulated sugar until well combined. Press the mixture into the bottom of a 9-inch springform pan.
- Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool completely.
- Reduce the oven temperature to 325F.
- In a mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
- Adding one at a time, beat in the eggs.
- Add in sour cream, heavy cream, flour, finger lime juice, and finger lime zest. Mix until well combined, smooth, and creamy.
- Pour the mixture onto the cooled crust.
- Place the cheesecake into the oven and bake it for 60-70 minutes, or until the edges have set and the center is slightly jiggly.
- Remove the cheesecake from the oven and let it cool to room temperature before refrigerating it for at least 3 hours or overnight.
- Serve the cheesecake with a sprinkle of crushed graham crackers and a few finger lime pearls for garnish.
